Beef Stir Fry:
For the sauce:
4 tablespoons soy sauce
1/4 teaspoon dark sesame oil
2 teaspoons sugar
For the stir-fry:
2 tablespoons vegetable oil
8 scallions
3 cloves thinly sliced garlic
1 tablespoon minced ginger
1-2 chili peppers
1 red bell pepper
1 lb. beef top round
Combine the sauce ingredients in a small bowl and stir well. Set aside. Make sure you don't forget where you put it, though. Heat a large skillet (or wok, but who has a wok, really?) over high heat for 2 minutes. Add the vegetable oil and heat for a minute. Add scallions (save 1 tablespoon to sprinkly as garnish), garlic, ginger, and chili peppers to pan and cook, stirring often for one minute. Add the red pepper and cook for another minute. Then ad the beef and cook for one inute before adding sauce. Cook beef until pink. Now sprinkle those garnish scallions.
Fried Rice:
3 cups cooked rice
2 tablespoons oil (vegetable, not actual oil)
1 carrot
1 stalk celery
1 small onion
1 tablespoon sugar
1 tablespoon soy sauce
Salt & Pepper
2 eggs
1 tablespoon milk
Day old rice works the best, so don't rush out and buy a new rice cooker just for this recipe. Believe me. You'll regret it, and you'll probably never be able to return it because you already took it out of the packaging. Next, heat some oil in a large frying pan, put in sliced carrots, thinly chopped celery and onion and cook for a few minutes to soften. Now throw in your soy sauce, salt and pepper. Add the rice to your pan and fry fora few minutes, stirring occasionally. Then, mix your milk and your eggs, and put that over the frying rice. Stir well, until the egg cooks. You could always add more vegetables, or meat to this recipe, if you want to make it more complicated for some reason.
